A slab of pork spare ribs cut into 1-1 1/2 inch pieces. Go with baby back ribs if you can since its much more tender. The Asian Market usually sells them already cut, but I bought mine from Meijers - so I butchered it myself with a nice heavy cleaver.
Put them in the pot that you will be cooking it in and add a medium onion cut into wedges, hoisin, sugar, fish sauce, salt, hot pepper flakes, minced garlic, mince ginger, and soy sauce.
Mix well and let marinade for 30 minutes.
Set over high heat for about 40 minutes or until it's nicely caramelized and cooked- adding water if necessary to prevent burning. Garnish with a dusting of black pepper and scallions (or cilantro). Serve with rice.
I should make this for Quang sometime. We watch a lot of Everybody Loves Raymond and he says a lot of mean things about Debra because she doesn't know how to cook and about how all women should know how to cook. Haha. I dunno if you watch that show but it's pretty hilarious, about as funny as Friends!
ReplyDeleteIt looks pretty simple but I need exact measurements, Le! Just tell me how much soy sauce.. I'm just gonna guess the rest from the amount it looks in the picture.
Try 2 tablespoons of soy sauce, 1/4th cup fish sauce...but it all depends on how much pork you're using. I think this was about a 4lb slab. And the small pile of white...that's sugar...not to be confused with salt! haha Home cooked meals are the bestest! The only TV I watch now is Amazing Race, so when that season is over, I don't watch TV. I need bravo so I can watch some Top Chef...it's so hard to find episodes online.
